Amarone della Valpolicela DOC

 

Made from 70% Corvina and 30% Molinara and Rondinella grapes from vineyards of calcareous soil, located 150-200 meters above sea level.  Specially selected grapes are hand harvested the first week in October.  The grapes are left on racks to dry, in controlled temperatured rooms, for at least 3 months, at which time they are de-stemmed and pressed and the must is put in small tanks to ferment at low temperatures of 10-14°C, for about 25-30 days.  Two-thirds of the way through the fermentation, the wine must fermentation is completed in stainless steel tanks at 20°C.  The wine is then aged in large oak barrels for a minimum of 24 months with an additional 12 months in the bottle.  This beautiful wine has a deep ruby red color with garnet highlights.  The aroma is intense and fruity with hints of cherry, black cherry, wild berries and exotic fruits.  The taste is full-bodied, warm and soft with velvety tannins and a long pleasant and persistent finish.  Great with red meats, all types of game and ripe cheeses.  Decanting is suggested in order to enjoy all this lovely wine’s flavors and nuances
