KYOS – Nero d’Avola
Kyos is named after the Greek island Chios, chosen as the name of this wine because of the fame of their wines since mythological times, and the similarity in the Sicilian climate, lifestyle and viticultural traditions.
Kyos is made from 100% Nero d’Avola grapes from 10 year old vines and hand harvested in the first 20 days of September with meticulous care as to the health and ripeness of the grapes. Maceration lasts for 10-12 days with daily re-submerging of the cap; fermentation and aging are done in stainless steel under controlled temperatures. After bottling, the wine rests for 3 additional months before being released.
This is a brilliant ruby red colored wine with spicy notes and a hint of small red fruits. It has a full taste revealing good persistency with a long finish reminiscent of Asian spices and fresh picked cherries. Kyos Nero d’Avola is the perfect wine to complement pasta dishes, grilled meats and ripened cheeses. Serve at room temperature.
