Valpolicella Ripasso DOC
Made from 70-80% Corvina and 20-30% Molinara e Rondinella grapes (depending on the harvest) grown in vineyards of calcareous soil, located 150-200 meters above sea level. Specially selected, hand picked grapes, harvested the first week of October and left on racks to dry in controlled temperatured rooms, for a minimum of 3 months. The current vintage of the Valpolicella Superiore is poured onto the lees of the Amarone grapes, and macerated for 8-10 days, with daily punching down of the cap. Fermentation is done in stainless steel tanks, then decanted and aged in barrique and oak barrels for 12-18 months, with an additional 6 months in the bottle. This is an intense ruby red wine, tending to orange during aging, with an intense aroma and elegant taste of cherries, vanilla, and blackberries and harmonious tannins. A fine partner to grilled red meats and game.
