Chiantu Classico Riserva

            Born from the Losi family vineyards, happily exposed on the hills south-southwest of Pontignano in the Commune of Castelnuovo Berardenga at an altitude of 300 meters above sea level, the Sangiovese finds its home, expressing all of its potentiality. 

            The grapes are hand harvested, choosing only the best grapes to obtain this Riserva.  The Chianti Riserva Millennium is made from 90% Sangiovese, 5% Canaiolo Toscana and 5% black berry Malvasia.  The grapes ferment in stainless steel vats under a controlled temperature that never exceeds 27?C.  The fermentation lasts 15-20 days on the skin, in order to extract more color, flavors, tannins, etc.  After the “racking off”, the juice goes into cement vasks for a second fermentation in order to make sure the malic acid is totally depleted.  Following this the wine is transferred into small Slavonic oak casks for a period of 24-28 months.  Three years pass before the bottling, in which time the maturation of the wine is carefully controlled. The wine then rests in the bottle for a further 6 months for the final refinement before its release. 

          Paolo & Pietro Losi have achieved an unsurpassed standard of excellence in the making of this great Millennium Riserva.  It is a beautiful wine that has an intense ruby red color that tends to granite with age.  The Millennium is a big, full-bodied and intense wine, has an elegantly deep, fruit taste with notes of vanilla, balanced tannins and a long finish.  A grand wine to serve with grand meals.
