CAIREL NEBBIOLO D'ALBA D.O.C.

Nebbiolo is considered one of the most beautiful and noble wines of the world. Grown in the hills of Alba, the grapes are picked early when the components are in better balance. Fermentation, both alcoholic and malolactic, are now usually conducted under controlled temperature. Even traditionalists consider stainless steel fermenting vats essential and most have shortened contact with the skins to less then one month. When aged for a spell in casks, Nebbiolo can show the variety's innate nobility and enviably drinkable style. Cairel's Nebbiolo d'Alba, from the vineyard "Raine," shows its typical character in a persistent and intense perfume of roses and dried flowers. The color is a magnificent garnet red, vivid, and intense, with shades of orange. The taste is dry and velvety and is a fine accompaniment to braised and roasted meats and seasoned cheeses. Serve at room temperature.
